Strawberry Cool Whip Pie
Ingredients:
1 (9-inch) graham cracker pie crust (store-bought or homemade)
1 (8 oz) tub Cool Whip (thawed)
1 (3 oz) package strawberry-flavored gelatin (like Jell-O)
1/2 cup boiling water
1/2 cup cold water
2 cups fresh strawberries, hulled and sliced
Optional garnish: extra whipped topping and whole strawberries for decorating
Directions:
In a medium bowl, dissolve the strawberry gelatin in the boiling water. Stir until completely dissolved, about 2 minutes.
Add the cold water to the gelatin mixture and stir to cool it down. Let it sit for about 10-15 minutes at room temperature to thicken slightly—but don’t let it set.
Fold the thawed Cool Whip gently into the gelatin mixture until fully combined. You’ll end up with a light, creamy, pink filling.
Gently fold in the sliced strawberries.
Pour the strawberry mixture into the graham cracker crust, smoothing out the top with a spatula.
Cover the pie and refrigerate for at least 4 hours, or until fully set.
Before serving, you can decorate with extra Cool Whip and fresh strawberries for an extra-pretty touch.
