Billion Dollar Buttery Biscuits
Ingredients:
2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon baking soda
1 teaspoon salt
1/2 cup unsalted butter, cold and cubed
1 cup buttermilk, cold
1/2 cup shredded sharp cheddar cheese
2 tablespoons fresh chives, chopped (optional)
2 tablespoons unsalted butter, melted (for brushing)
Directions:
Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
In a large mixing bowl, combine the flour, baking powder, baking soda, and salt.
Add the cold, cubed butter to the dry ingredients. Using a pastry cutter or your fingers, work the butter into the flour mixture until it resembles coarse crumbs.
Stir in the shredded cheddar cheese and chives (if using).
Pour in the cold buttermilk and gently mix until just combined. Do not overmix.
Turn the dough onto a lightly floured surface and gently knead 4-5 times. Pat the dough into a 1-inch thick rectangle.
Use a round biscuit cutter to cut out biscuits and place them on the prepared baking sheet, leaving a small space between each.
Bake for 12-15 minutes, or until the tops are golden brown.
Brush the tops of the hot biscuits with melted butter for an extra buttery finish.
Serve warm and enjoy the luxurious, flaky layers!
