Cheesy Potato Skillet Recipe


Ingredients:

2 large potatoes, thinly sliced

Vegetable oil, for frying

Salt and black pepper, to taste

4 eggs

A handful of cherry tomatoes, halved

A bunch of green onions, chopped

200 grams sour cream

50-70 grams mozzarella cheese, grated

Fresh parsley, chopped (for garnish)







Instructions:

Prepare the Potatoes:

Heat a generous amount of vegetable oil in a large skillet over medium heat. Add the sliced potatoes in a single layer, seasoning them with salt and pepper. Fry until they are golden and crispy, turning occasionally for even cooking. You may need to do this in batches depending on the size of your skillet.



Cook the Eggs:

Once the potatoes are cooked and spread evenly across the skillet, crack the eggs over the top. Season with a little more salt and pepper. Cover the skillet with a lid to allow the eggs to cook through from the steam, or flip them if you prefer them over easy.



Add the Toppings:

Scatter the halved cherry tomatoes and chopped green onions over the eggs and potatoes. Spoon dollops of sour cream around the skillet, and sprinkle the grated mozzarella cheese evenly over the top.



Finish Cooking:

Cover the skillet again and let cook for a few more minutes, just until the cheese is melted and the eggs are cooked to your liking.



Garnish and Serve:

Once everything is beautifully melted and cooked, sprinkle chopped fresh parsley over the top for a fresh touch. Serve hot directly from the skillet.
