Avocado Mango Salad Recipe

This refreshing salad bursts with vibrant flavors of mango, creamy avocado, and peppery arugula, all brought together with a zesty honey-lime dressing. Perfect for a light lunch or a side dish!
Ingredients:
For the Dressing:
- 3 tablespoons freshly squeezed lime juice
- 1/4 cup extra virgin olive oil
- 2 tablespoons honey
- Salt and pepper, to taste
For the Salad:
- 5 oz arugula
- 1 ripe mango, peeled, pit removed, and diced into bite-sized pieces
- 1 avocado, peeled, cored, and diced
- 1/4 cup red onions, thinly sliced
- 1/3 cup pine nuts, toasted
Directions:
1. In a small bowl, whisk together the freshly squeezed lime juice, extra virgin olive oil, and honey until well combined. Season with salt and pepper to taste. Set aside to allow the flavors to meld while you prepare the salad.
2. Place the pine nuts in a dry skillet over medium heat. Toast them, stirring frequently, until golden and fragrant. This should take about 2-3 minutes. Remove from heat and set aside to cool.
3. In a large salad bowl, combine the arugula, diced mango, diced avocado, and thinly sliced red onions.
4. Drizzle the prepared honey-lime dressing over the salad ingredients. Toss gently to ensure all the components are evenly coated with the dressing.
5. Sprinkle the toasted pine nuts over the salad just before serving to maintain their crunch.
6. Toss the salad lightly once more to distribute the pine nuts throughout.
