Meatball Boats
Ingredients:
1 lb. ground beef
1 large egg
⅓ cup breadcrumbs
¼ cup Parmesan cheese, grated
1 tablespoon minced garlic
1 tablespoon fresh chopped parsley
Salt and pepper, to taste
1 tablespoon olive oil
2 cups marinara sauce
8 mini hoagie rolls
12 slices Asiago cheese
Instructions:
Preheat the Oven: Set to 350°F. Prepare a baking pan with nonstick spray.
Mix Meatball Ingredients: In a bowl, combine ground beef, egg, breadcrumbs, Parmesan, garlic, and parsley. Season with salt and pepper. Mix well.
Form Meatballs: Use an ice cream scoop to form meatballs from the mixture. Set aside.
Brown Meatballs: Heat olive oil in a skillet over medium heat. Add meatballs, browning them on all sides (about 5 minutes).
Bake Meatballs: Transfer seared meatballs to the parchment-lined baking pan. Bake for 12 minutes.
Prepare Hoagie Rolls: Cut an oval on top of each roll, hollowing out the top without breaking through the bottom. Place a slice of cheese inside each hollowed roll.
Bake Rolls with Cheese: Bake rolls for 8 minutes, or until cheese melts.
Assemble Meatball Boats: Add 2 tablespoons of marinara over the melted cheese in each roll. Place three meatballs on top, add more marinara, and sprinkle with Parmesan.
Final Bake: Return to the oven for 6-8 minutes.
