Fried bombs: easy, fluffy and tasty!

INGREDIENTS:
250g (8.8 oz) all-purpose flour;
250g (8.8 oz) ‘00’ flour;
1 cup warm water;
100 g (3.5 oz) sugar;
50g (1.7 oz) butter, room temperature;
2 tsp vanilla extract;
2 tsp dry yeast;
½ tsp salt;
Sugar for decor.
METHOD:
Combine both flours with yeast and salt, make a well in the center and pour sugar, vanilla and water into it.
Working with dough hooks, knead the dough until it starts to come together. Add soft butter and continue to mix everything until the dough is smooth and uniform.
Form the dough into a ball, cover with plastic and set aside for an hour.
When the dough has doubled in size, divide it into 30 g (1 oz) portions and form each into a ball. Cover again and set aside for 20 minutes.
Meanwhile, heat vegetable oil to 180C/350F. Fry donuts for 4-5 minutes or until golden. Pass in sugar before serving.
