VANILLA UBE SUGAR COOKIES


INGREDIENTS:

2 1/2 cups plus 1 tablespoon (364 g) AP flour

3/4 teaspoon baking soda

3/4 teaspoon salt

1 cup (227 g) unsalted butter room temperature

1 3/4 cup [350 g] granulated sugar

1 large egg plus 1 large yolk

2 teaspoons pure vanilla extract

1.5 - 2 teaspoons vanilla paste

2 teaspoons ube flavoring

2 teaspoons ube jam

Granulated sugar for rolling






METHOD:

1. Preheat the oven to 350°F.

2. In a medium bowl, combine the flour, baking soda, and salt.

3.In a large bowl, beat the butter until creamy and pliable. Add the sugar and beat until light and fluffy (about 3 minutes if by hand).

4. Add the egg, yolk, and vanilla extract and mix until well combined. Add the dry ingredients mixture and mix until just combined.

5. Weigh the dough and divide in half into 2 bowls. In one half add the vanilla paste and mix until combined (for me this was when the vanilla seeds were disbursed throughout the dough).

6. In the other half add in the ube flavoring and jam and mix until combined (the dough should have a nice deep purple throughout with pretty much no white dough showing).

7. Pinch a small portion (I did about 3/4 of a tablespoon of each) of each of the doughs and press them gently together so they adhere to each other, but each keep their colors.

8. Gently roll it into a ball or cylinder, then roll in granulated sugar to coat.

9. Place cookies on a lined sheet pan. Bake the cookies for about 11 minutes, rotating halfway through baking. They'll be set on the edges and slightly puffed in the middle when done.

10. Cool the cookies for about 10 minutes before moving to a cooling rack.

11. Enjoy your vanilla ube sugar cookies.
