VEGGIE PACKED PASTA BAKE

This is a veggie packed pasta bake whose nutritional value I have destroyed with cheese.

INGREDIENTS:

1 yellow pepper

1 big or 2 small courgettes 

1 big yellow/white/brown/whatever onion 

1 beef tomato 

^ all chopped up chunky like 

2-4 or more cloves of garlic finely chopped

1 tin of chopped tomatoes 

Half teaspoon cayenne pepper

Pinch of paprika

Grated cheddar (much as you want really) 

Dried pasta, idk about 300g?

Fresh mozzarella (optional) 

Fresh basil (optional) 






METHOD:

1. Soften onion and garlic together with plenty of olive oil in a large pan, med-low heat.

2. Add pepper and courgette and let sweat with the lid on, just a few minutes. 

3. Add both Fresh and tinned tomatoes, about half a cup of water, the cayenne, and the paprika. Season then cover and leave to simmer until you have a thick sauce, stirring occasionally.

4. Take your sauce off the heat and leave to rest while you cook pasta, to about 2 minutes under package instructions. Turn the oven on to 180°C. 

5. Combine pasta and sauce, with some fresh basil leaves if using, tip into oven proof dish (or dishes, I usually make too much). 

6. Push pieces of mozzarella into your pasta, as much or little as you like, then cover with grated cheese, bake for about 20 minutes.

7. Enjoy your veggie packed pasta bake.
