TERIYAKI QUINOA SALMON

here your go with this "Teriyaki Quinoa Salmon " super simple to make & packed with flavor!

INGREDIENTS:

Quinoa Salmon Teriyaki

- 1 cup Quinoa cooked( according to the pack instructions)

- 500 g salmon fillets

- 2 cups mixed vegetables frozen or fesh (broccoli, zucchini, carrots, cabbage, green onions, green beans, edemame....)

The Sauce:

- 3 minced garlic cloves

- 1 tbsp grated fresh ginger

- 1 tbsp sesame oil

- 1/4 cup teriyaki sauce

- 1/4 cup soy sauce

- 3 tbsp rice vinegar

- 3 tbsp honey

- chilli flakes to taste






METHOD:

1. in a bowl , mix all the sauce ingredients together

2. put the salmon fillet in a baking tray and add 1/2 of the sauce quantity over.

3. Let the salmon marinate at room temperature for 15 minutes, flipping once halfway through.

4. then cover them and bake in a preheated over for 15-20 minutes maximum.

5. meahwhile in a hot skillet , add 1 tbsp olive oil & Sauté the vegetables until crisp-tender, about 5 to 7 minutes then pour the remaining sauce over. cover & let them simmer for 2 to 3 minutes only.

6. to serve, place the cooked quinoa in a plate or bowl, top with sautéed veggies, salmon. sprinkle with a little of the remaining reserved marinade and additional red pepper flakes. 


7. Enjoy your Teriyaki Quinoa Salmon.
