stuffed peppers

These quinoa black bean stuffed peppers are the perfect weekday lunch or dinner! 

A light, healthy and flavourful meal rich in protein and fiber and so easy to make.

INGREDIENTS:

1 1/2 cups quinoa

1 medium onion chopped

3 cloves garlic crushed

1 can black beans drained and rinsed

1/2 cup cilantro chopped

3 cups vegetable broth

3 tablespoons oil

1 teaspoon dried oregano

1/2 teaspoon hot pepper flakes

Salt and pepper to taste

6 bell peppers






METHOD:

In a big pot sauté the onions in the oil until onions are translucent.

Add in the garlic and sauté a few minutes.

Add the quinoa and black beans and give it a mix.

Next add in the vegetable broth and spices.

Once it all comes to a boil lower the heat to simmer, close the lid and let it cook for 20 minutes.

Once quinoa is done mix in the fresh cilantro.

Cut the peppers in half or cut off the top and remove the core and seeds.

Fill each pepper with the quinoa filling and top with shredded cheese.

Place stuffed peppers on an oven safe tray lined with parchment paper.

Place in oven preheated at 400 degrees for 10-15 minute. 

Enjoy your stuffed peppers.
