RUSSIANS & POTATOES TRAY BAKE

Using the Roast Veggie Seasoning to flavour the baby potatoes and its amazing. I used Smoked Russians although any type of russian, including cheesy variations would also work perfectly. You can serve this with your favourite sauce to compliment the bake, altogether easy and simple.

INGREDIENTS:

1 kg Baby Potatoes

2 Tbsp Olive Oil

1 Tbsp Roast Veggie Seasoning

300g Vine Tomatoes

1 Tbsp Olive Oil

1 Tsp Salt

500g Smoked Russians






METHOD:

1. Preheat oven to 220 C and prepare an oven-safe dish by spreading oil on the oven dish.

2. Rinse and half the baby potatoes and add to oven-safe dish.

3. Add 2 tablespoons of Olive Oil and Roast seasoning to the potatoes and toss to coat.

4. Add to oven and roast for 25 minutes then remove from the oven.

5. In a bowl, add vine tomatoes and brush with 1 tablespoon of olive oil and add salt.

6. Add russians and vine tomatoes to the potato bake.

7. Return to oven, reduce heat to 180 C and bake a further 15 minutes until tomatoes are bruised and russians are cooked through.
