INGRIDIENT :
Tri-colored quinoa
Green pepper
Radish
Tomatoes
Breaded zucchini fries

|BREADED ZUCCHINI FRIES|
4 medium zucchini
2 large eggs
1/3 cup flour
1/2 cup bread crumbs
1/4 cup parmesan cheese
1/4 tsp garlic power
1/2 tsp dried parsley
1/4 paprika
Salt and pepper to taste
METHOD :
Preheat over to 425 degrees and line a oven safe tray with parchment.
Slice the zucchini into fries shapes.
In a shallow bowl add bread crumbs, parmesan cheese, garlic powder, dried parsley, paprika, salt and pepper and mix together.
In another bowl crack the two eggs and whisk it together.
In another bowl add the flour.
Place zucchini fries on a paper towel and pat dry.
Dip the zucchini fries in the flour then eggs then coat with the bread crumb mix.
Line them on the tray lined with parchment paper making sure they are not touching and continue the same process for all the zucchini.
Once all of them have been coated place the zucchini fries in the oven at 425 degrees for 12-15 minutes.
Let them cool.
