BOLOGNESE PASTA BAKE This is a weeknight dinner idea for a family, there are 6 servings available and so easy to make. This is quick and easy to make on a weeknight and is absolutely delicious! I used Penne pasta; but any short pasta shape would work well.

INGREDIENTS:
350g Penne Pasta
1 Tbsp Vegetable Oil
500g Beef Mince
Salt and Pepper
1 Onion, chopped
1 Tbsp Crushed Garlic
200g Mushrooms, diced
25g Tomato Paste
1 Tsp Oregano
1 Can Crushed Tomatoes
100g Cheddar Cheese, grated
METHOD:
1. Preheat oven to 200 C and cook pasta as per package instructions and set aside.
2. In a large pan on high heat, add the vegetable oil and the beef mince.
3. Season beef mince in the pan with additional salt and pepper then cook until there are no more pink bits. Once cooked, remove the mince from the stove and set aside.
4. In the same pan on medium heat, add the onion, garlic and mushrooms. Cook until vegetables have softened.
5. Add the oregano and tomato paste to the pan and cook until paste has darkened in colour.
6. Add the canned tomatoes and mince back to the pan, and stir to combine, cook on low heat for at least 15 minutes then remove from heat.
7. Add the cooked pasta and the cooked mince to an oven-safe dish and toss to combine.
8. Add a layer of grated cheese to the top of the pasta bake and bake in the oven for 20 minutes until cheese is melted and golden.
