MOROCCAN COUSCOUS SALAD

INGREDIENTS:

1 cup couscous

1 cup hot water

1 tbsp olive oil

1 medium tomato, chopped

1/2 cup bell peppers

1 ​​cucumber, chopped

1/2 cup cooked chickpeas

1/4 cup chopped parsley

1/4 cup chopped green onions

1/2 cup black or green olives

1/4 cup sun-dried tomatoes




FOR THE SALAD DRESSING:

1/2 cup of lemon juice

¼ cup olive oil

Moroccan Harissa (optional) or hot sauce

1 tsp Paprika Powder

1 tsp cumin

salt& pepper to taste

1 tsp dry mint



METHOD:

1. In a suitable bowl, put the couscous and add to it a cup of hot water& a spoonful of olive oil, leave it for 5 minutes then stir with a fork to prevent any lumps.

2. Add the rest of the ingredients, then pour the salad dressing, mix well, add lemon if needed. 

3. ENJOY YOUR MOROCCAN COUSCOUS SALAD.
