FANCY STUFFED CHICKEN BREAST

INGREDIENTS:
6 chicken breasts de-boned & skinless
24 asparagus spears
2 cups of spinach
Cheese - Provolone or Feta
salt and pepper to taste
100g/3.5oz prosciutto

MARINADE:
2 tablespoons of marinara sauce
1 teaspoon of dry basil
1 teaspoon of dry parsley
1 teaspoon of Montreal chicken spice
2 tablespoons of olive oil
METHOD:
Lay flat your chicken breasts on a glass cutting board.
Place on top of your chicken breasts, 4 asparagus spears, a pinch of spinach and crumble a few spoonfuls of feta.
Add salt and pepper as well as Montreal chicken spice (or substitute with paprika).
Roll the chicken breasts with stuffed ingredients
Rub marinade all over the stuffed chicken breasts. Top off with olive oil and Montreal chicken spice and brush to distribute evenly.
Pre-heat the oven to 375ºF and bake for 30 minutes. Remove from oven and let the meat rest for approx 5 minutes before plating.
