A delicious and fresh shrimp and roasted tomato pasta in an avocado and coriander OR basil sauce ( in case you are one that thinks coriander should be for soap making)

SUPER QUICK AND SIMPLE.

INGREDIENTS:
Packet of fusilli pasta cooked al dente
300 grams of shrimp deveined
1 cup Baby tomatoes
1 tbsp olive oil
1tsp paprika
Salt and pepper

SAUCE:
3 avocados
1/4 cup of olive oil
1/4 cup of grated parmesan
3/4 cup cilantro OR basil
1 garlic clove
2 tbs fresh lime juice
Salt and pepper to taste
METHOD:
Make the sauce in the food processor until smooth and to your taste. Mix the paprika and salt all over the prawns and in a hot frying pan, add the olive oil and fry them for about 2 to 3 min until pink turning halfway. Put them aside and add the tomatoes to the pan and allow them to toast nicely till they start to burst. Mix the sauce, pasta, prawns and tomatoes and top with chopped coriander/ basil and grated parmesan.
