MANGO SALSA CHICKEN TACOS

RECIPE:

- white corn tortillas

- 10 chicken thighs

- Drizzle of olive oil

- 1 tbsp cumin

- 1 tbsp oregano

- 1 tbsp paprika

- 2 tsp garlic powder

- 2 tsp chili powder

- 1 tsp onion powder

- 1 tsp salt

- 1 tsp black pepper

- 3 tbsp lime juice


SALSA:

- 2 mangoes diced

- 1 avocado diced

- 1 red bell pepper diced

- 1 small onion diced

- Handful chopped cilantro

- a few diced habaneros

- 1 tomato diced

- 3 tbsp olive oil & lime juice

- salt to taste





MAYO:

- 1 cup Mayo

- handful cilantro

- 3 cloves garlic

- lime juice to taste

- (if you’d like your sauce to be more liquidy- add a tbsp of water until your happy with the consistency)




METHOD:

- Toss your chicken together with your seasonings & cook in olive oil - medium heat for about 4 minutes in each side until your chicken is fully cooked & nice and crispy on the outside

- Chop up your cooked chicken & set to the side

- Toss together your salsa ingredients- & now you’re ready to assemble your tacos

- Toast your corn tortillas how you prefer (I just flipped mine on stove top) add your chicken, salsa, & Mayo - serve with extra lime slices

- ENJOY.
