TOMATO MOZZARELLA CAPRESE SALAD
Quick and easy to make. And looks so pretty! Serves 1 as an individual salad or upto 4 as a side salad to share.
INGREDIENTS :
- 1 large tomato
- 10 slices Mozzarella cheese
- 1 cup fresh basil
- Extra virgin olive oil
- Salt and freshly ground black pepper
METHOD:
1. Cut tomato into 5 equal sized slices, reserving any leftover pieces. Then cut each slice in half so you have 10 pieces.
2. Arrange alternate tomato and mozzarella slices on a plate creating a pinwheel effect.
3. Dice the leftover tomato pieces and arrange in the center of the pinwheel. Surround with half of the basil leaves.
4. Roll up the remaining basil leaves and slice finely, creating 'ribbons'.
5. Drizzle the extra virgin olive oil over the salad, season with salt and freshly ground pepper. Garnish with the basil ribbons.
