BEEF STEW RECIPE

INGREDIENT :

  • Beef with bones.
  • Carrots
  • Canned tomatoes
  • 2 Tomatoes chopped
  • Tomato puree
  • Potatoes
  • Cooking Oil
  • Salt +pepper
  • stock ( I used the water I boiled the beef in)
  • Paprika +Cayenne pepper
  • Usavi mix (Zimbabwean spice)
  • Onion + garlic cleaned & finely chopped






METHOD :

1. Boil the beef in water with salt & garlic until its tender in a pot over medium heat.

2. Drain any excess water from the pot & put it in a cup on the side.

3. Add cooking oil to the pot and brown the meat as much as you want.

4. Add chopped onions, garlic and continue to fry until the onion is cooked.

5. Mix the canned, puree & chopped tomatoes in a bowl with a pinch of sugar, salt & add it to the pot.

6. Stir well & add the water you saved in the cup & cover with a lid.

7. Allow it to simmer for about 15minutes. ( reduce the heat and keep checking that it's not burning, you could add more of the water)

8. Add the spices(paprika +cayenne). Dissolve the the usavi mix in the leftover water or in a bit of boiling water and pour it into the pot.

9. Stir in well & let it simmer for about 5-8minutes more.

10. Taste & taste, add any other spices you like

- serve with mash, rice or sadzas/pap
