Potato boats with italian twist


I've got you for tonight's dinner these {Potato boats with italian twist} are so good & super easy to prepare you can have them as a light meal or even as a side dish.

POTATO BOATS WITH ITALIAN TWIST:

INGREDIENTS:

- 4 potatoes medium sized

- 4 tbsp olive oil

- 1/4 cup or 8 tsp sundried tomatoes & pesto paste

-1/3 cup slices fresh mushrooms

- 1/2 cup grated white cheddar cheese

- salt & pepper to taste

- italian herbs+ garlic powder to taste( drizzle over each potato piece)

- 3 to 4 garlic cloves( optional)

- parsely leaves to sprinkle on the top.






METHOD :

1. Boil the potatoes in salted water for 12 minutes then drain & dry them well then cut into halves.

2. In a large skillet heat the olive oil then fry the potatoes until they change color around 3 to 5 minutes. season them with salt & pepper.

3.Transfer the potatoes to a baking tray lined with parchment paper, top them with the tomato/ pesto paste, italian herbs +garlic powder, mushrooms slices,  grated chesse & some parsely leaves. Place the garlic cloves randomly between the potatoes.

4. Put the tray in the oven for almost 5 to 7 minutes until the cheese has melted.
