JAMBALAYA

EVER HEARD OF JAMBALAYA...

Ever considered making 1 pot meals?? I love love any 1 pot rice meals..Well that's coz i am inlove with rice...

INGRIDIENTS:

Prawns (frozen store bought, precoooked & packaged)

Chicken Thighs deboned and cut into small pieces

Sausages sliced into medium sized circles

1 onion chopped

1/2 red, yellow, green pepper diced

2 cloves of garlic

1 can chopped tomato

Cajun Spices

Salt + Pepper

4 cups Chicken stock

4 tbs or so Cooking oil

2 cups Rice washed

Peri Peri hot sauce/ Tobasco (optional)

1/4 tsp Smoked Paprika

Chilli flakes (as much as you want)

1/4 tsp Parsley, Oregano

1 tbs Balsamic Vinegar (if you don’t have that fine)

Shallots finely chopped (to serve)




METHOD :

Marinate your chicken thighs with cajun spices and set aside.


Preheat a large pot/pan & add some cooking oil. Add the chicken to the pan and just brown it on all sides, remove & set aside. Next add the sausages & cook for 4-5minutes or until browned, remove & set aside.


Add onions, cook until they are soft. Add garlic & cook for 1minute then add peppers and cook for  2minutes.


Now add your chopped tomatoes, stir, cover with a lid & let it simmer for 8minutes and so. After, add balsamic vinegar, hot sauce, salt + pepper, cajun spices, paprika, parsley, oregano, stir and let it cook for a minute. Now please, add your chicken & sausage to the pan, stir until the chicken is throughly coated.


Then add in your rice & pour the chicken stock, stir is carefully to mix, cover & bring to a boil for 25-30minutes or until the rice is cooked.


When the rice is cooked, add your prawns. You can stir them in the rice or just place them on top. Cover & let it simmer for 5minutes

Sprinkle the shallots and serve when you ready.



NOTES:

If you using whole & uncooked prawns please clean, peel & devein them properly.

There is a specific sausage for this recipe (ANDOUILLE) but you can use boerewors ..I did.
