HASSELBACK POTATOS

To cut the slices accurately, you can place 2 wooden spoons or chopsticks on either side of the potato, this will ensure that when you cut slices the knife does not go all the way through. Another option is to place another cutting board on the side of the potato to use as a guide. Lastly, you could place the potato in a ladle spoon and cut to the spoon.

INGREDIENTS:

  • 6 Potatoes
  • 4 Tbsp of Butter (Melted)
  • 2 Tbsp Olive Oil
  • Salt and Pepper




METHOD:

1. Preheat your oven to 220 C.

2. Wash the potatoes, you can also remove the skin if you want to. Cut slits into your potatoes about a ½ cm between each slit. Try to cut these as straight as possible and place them in an oven-safe dish.

3. Brush the potatoes liberally with the butter and season with salt and pepper.

4. Bake the potatoes for 40 minutes, then remove from the oven and brush with Olive Oil. Return potatoes to the oven a further 20-30 minutes.

Serving Suggestions:

1. Add herbs at the halfway mark when baking the potatoes for an enhanced flavour, herbs such as rosemary.

2. Add garlic to the olive oil and brush on at the halfway mark for a garlic flavour.
