Chicken Stew


INGREDIENTS :

3 tbsp oil

6 pieces chicken

salt and pepper

1 onion chopped

1 clove garlic sliced

2 tbsp flour

2 cups chicken stock

2 tbsp Worcestershire sauce

60ml canned tomatoes in sweet chili

2 carrots peeled and chopped

2 potatoes peeled and chopped

Fresh parsley chopped to garnish




METHOD :

Heat oil in a saucepan

Season chicken with salt and pepper and brown for 10 minutes until golden

Remove and set aside on a plate

In the same pan add onion and fry until soft for 3-4 minutes, then add garlic and fry for few seconds

Add flour and cook stirring for 1-2 minutes, add stock and mix well to form a smooth sauce

Add Worcestershire sauce, tomatoes, then return chicken back in the sauce

Add carrots and potatoes, cover and cook for 20 minutes or until chicken is cooked through and the vegetables are soft

Garnish with parsley and serve
