AVO & PARSELY PASTA and its green! I’m ecstatic about this one. Firstly, minimal cooking, you could get this done in under 30 minutes. Secondly, it is vegetarian and could be vegan-friendly if you switch to a vegan pasta and use a Parmesan vegan alternative. Thirdly, there’s avocados and I love avocado.
INGREDIENTS:
1 ½ Avocados
30g Fresh Parsley
2 Garlic Cloves
1 Tbsp Fresh Lemon Juice
Pinch of Salt
100ml Cold Water
250g Penne Pasta
50g Grated Parmesan
METHOD :
1. Remove the peels and core from the avocados, chop them up and add to a food processer. Rinse the parsley and add to the food processer as well as the garlic, lemon juice, salt and water. Process until smooth and refrigerate until ready to use.
2. Cook pasta as per cooking instructions, remove a cup of pasta water and set aside. Drain remaining pasta water.
3. In a large bowl add the cooked pasta and avocado sauce, toss to combine. To make the pasta creamier: Add pasta water ¼ cup at a time into the pasta and mix until combined.
4. Serve with parmesan cheese to serve.
