The simplicity of this dinner makes it top tier. This is our date night meal for the week and we are stoked. I have a recipe below for the wors and tomato stew, just note that it is a spicy recipe.
INGREDIENTS:
1 Tbsp Vegetable Oil
700g Boerewors
1 Onion, chopped
2 Tsp Crushed Garlic
2 Chillies, deseeded and sliced
2 Tsp Chili Powder
1 Tsp Paprika
½ Tsp Ground Cumin
½ Tsp Salt
½ Tsp Cayenne Pepper
1 Tbsp Tomato Paste
1 Tbsp Granulated Sugar
1 Can Chopped Tomatoes (400g)
1 Cup Beef Stock
METHOD :
1. Heat oil in a skillet over medium-high heat. Cut the Boerewors into smaller pieces and brown on both sides, remove from skillet and set aside.
2. Add Onions to the skillet and cook until translucent, about 3 minutes. Add Crushed Garlic and Chillies, cook until garlic is fragrant, about 2 minutes.
3. Add Chili Powder, Paprika, Ground Cumin, Salt, Cayenne Pepper and Tomato Paste. Cook until Tomato Paste has darkened in colour.
4. Add Granulated Sugar, Can of Chopped Tomatoes and Beef Stock, then bring skillet to a boil.
5. Lower the heat and return the Boerewors to the pan. Cook uncovered for a further 15 minutes on medium heat.
