Cold wet weather calls for simple hearty stews and soups.

I personally enjoy my soups with bread or on their own to keep me full and warm.

Here's a recipe for this simple budget veggie stew/soup.



INGREDIENTS:

1 large potato diced, a cup or two of chopped spinach, 1 large carrot chopped, 1/2 onion diced, 1 baby fennel, 1 tbsp crushed garlic and ginger, 1 tbsp turmeric powder, 1 tsp dried thyme, 1/2 tsp smoked spanish paprika, 1 tbsp vegetable or chicken stock powder, a bit of oil - 2 tbsp, 300ml water(depend on how much soup you want). Salt (optional).



METHOD:

Sautéed onions, baby fennel, garlic and ginger in heated oil till onions are soft.

Add in carrots + potatoes + turmeric +thyme + bay. 

Fry cook for +/- 1 minute on reduced heat. Add +/-300ml water. Bring to boil and cook till potatoes are medium cooked. 

Then add chicken stock powder.

Mix it in. Add in your spinach. Let it cook till medium cooked (or cooked to the level preferred). 

Add smoked paprika + salt (optional especially if the stock is salty). 

Let it simmer for a few minutes and till the soup has thickened a bit.

Remove from heat and serve warm.
