I honestly used to think that having a plant based diet and/or vegetarian diet would be difficult but it's proving the opposite. The more I do it the more easier and the fun it gets - No lie - can anyone else relate?
Anyways, this is a meal I made last week from some of the leftovers and it was such a fun easy lazy meal. If you are still trying to figure out the whole plant based diet thing and struggling to enjoy most meals I'd recommend you try this basic veggie stew.
Here's the recipe:
Veggies:
1/4 large onion diced, 1 carrot diced, 1 large potato diced, 1 cup broccoli (bite pieces),, 1/2 cup peas, 1/2 cup corn, Peppers (red and Yellow). Spices: Coriander,Cumin, Turmeric, Paprika, vegetable /Chicken stock powder , 1 tbsp crushed garlic & ginger, 2 x Bay leaves. Salt( if needed). Peri peri (optional).
METHOD:
Sautéed onions (with ginger +garlic and bay leaves) till onions are soft. Add your spices + veggies and sautéed on low for +/- 2 minute. You can add a bit water if needed to avoid burning at this state- usually 2 tbsp at a time is enough.
Then add 350ml of water (you can add more of less depending on how much soup you want) and bring to boil for +/-3 min or till potatoes are medium cooked. Then add your vegetable stock power and salt( if needed) + peri peri (optional) . Mix and cover to let it simmer on low heat till the soup has thickened a bit and potatoes are well-cooked. Enjoy with any side of your choice or as soup.
