Oven baked veggies recipe from previous meal as promised:
Select your preferred veggie mix and cut according to preferred size and shape. Place in a baking tray (with baking paper--optional) - Season with salt and pepper. Then drizzle some olive oil. Bake in a preheated oven for 15-30 minutes at 170°c - making sure that you check and turn pieces in between.
Remove from heat when cooked to your preference : well done or crisp.
Tip:
For extra flavour in baked veggies, especially where I use salt and pepper for seasoning I usually serve them with some of my favorite salad dressing
this might help especially if you struggle eating veggies or find them distasteful
Also, consider adding pineapple to the mix - I am personally obsessed
