Chocolate centred, Cinnamon bites coated with lemon/lime flavoured icing 🍋
Super quick snacks for your family in winter.
Goes down smoothly with that morning coffee 👌🏼
Ingredients:
Flour 1.5 cups (you can substitute with self raising)
Baking powder 0.25 tsp (leave it out if using self raising)
Sugar 2 tbsp
Salt 0.25 tsp
Cinnamon 1 tbsp
Ginger 0.5 tbsp
Nutmeg 0.5 tbsp
Vanilla essence 0.25 tsp
Butter 2 tbsp (melted)
Milk 100ml (room temperature)
Baking Chocolate pieces
Oil (for cooking: this will depend on the size of your pot/pan)
Icing :
1-2 cups icing sugar (depends on how thick you wnst your icing. I used 2 cups)
Lemon and lime zest
Lemon juice 1 tsp
Lime juice (half a small lime)
Milk 1-2 tbsp (also depends on thickness you want)
Method:
Mix all your dry ingredients.
The add all your wet ingredients together (milk, melted butter and vanilla essence).
Then add to the dry ingredients. Mix properly.
Leave your dough for a few minutes while setting up your heat/oil for cooking.
Then knead for 1-2 minutes for a firmer dough.
Now divide your dough into smaller equal pieces-enough to make round shape of your preferred size and enough to cover the chocolate.
Put chocolate piece at Centre and wrap/cover making sure you create the almost perfect round shaped dough .
Your oil should be ready once you are done. Make sure its on low to medium - ish.
Not too hot because you want to slow fry this to avoid burning the outside before the inside is cooked.
Fry for 15-20 min (adjust time depending on your stove).
Remove from heat, let it cool down for a minute or so. Then coat with your icing OR chocolate of you want.
For icing:
Mix: icing sugar, lemon juice & zest, lime juice & zest and milk.
Best served while warm as a snack on its own or with tea or coffee.
