beef stew

So here's a simple beef stew to give you and your family a little hug 😋

WHAT YOU NEED:

About 1kg fresh stewing beef-cut into small pieces

1/4 large onion

1 large tomato

3/4 bell peppers (1/4 of each-red, green and Yellow) - this is optional-use what's available if you don't have all colours

SPICES:

1 tbsp curry powder

1/2 tbsp ground Coriander

1/2 tbsp ground turmeric

1/2 tbsp ground garam masala

1 tsp cumin

1 tbsp beef stock (Swipe to see the one I used)

Some salt (optional esp if beef stock if salty)

1 tsp sugar

Olive/vegetable oil-about 2 tbsp

Water: about 350-400 ml)



METHOD:

1. The well known first step- Brown your beef pieces in heated oil on medium high - it should take about +/-5 minutes depending on the heat . Remove from the pot into a separate container/bowl.

2. In the same pot (with same oil), 'fry' your onions for about 30 seconds or till translucent. Add in peppers and all your spices except beef stock and let everything 'fry cook' for about 45 second.

3. Add in chopped tomato. Stir and cover to let it 'fry cook'. Stir in between and cook till tomatoes are medium soft/cooked.

4. Reduce to medium-

Then add back the beef pieces + salt + sugar - and continue to 'fry cook' and stirring in between for about 5 minutes on medium heat. Ensure nothing burns-consider adding a bit of water or reducing heat.

5. Add water to the pot + beef stock. Mix and cover [ this is the part where you can add some chopped vegetables].

Let it cook and simmer on medium low heat till the soup/sauce has thickened and meat cooked . Remove from heat and serve hot with any side you prefer.
