Beef stew recipe as promised: (the one I used for my dumplings).
INGREDIENTS:
Stewing beef cut into smaller pieces cleaned : 300 to 500 g
2 tbsp flour seasoned with salt & pepper (optional)
Half onion diced
1 large tomato peeled and chopped
Vegetables of your choice: I used carrots and potatoes--evenly chopped.
Fresh Rosemary
1 tsp Garlic and ginger paste
1 tbsp Tomato paste
1 tsp Italian herbs dried
Bay leaves
Fresh Thyme
Sweet peppers (handful max)
Coriander 1 tsp
Tumeric 1 tsp
Paprika 1 tsp
Pinch of Garam masala
Salt
Black Pepper
1 tbsp Sweet chilli sauce
1 tsp soy sauce
Water 350ml to 500 ml (adjust accordingly as you cook)
Olive oil or cooking oil (for frying and/or cooking : use the amount preferred :I usually use 1 to 2 tbsp for frying /browning my meat)
METHOD:
Mix/coat your Stewing pieces with seasoned flour: this step (coating with flour) is optional but it helps thicken the stew.
Prepare your pan: heat it up and add some olive oil. Then add your coated Stewing pieces and start browning your meat. Remove from the pan and set aside in a bowl covered.
In the same pan, Add your onions, rosemary, thyme, bay leaves, ginger and garlic in a pan (non sticky recommended) and fry till your onions are medium cooked (you can add a little more oil if you feel like it's not enough).
Now add tomatoes, tomato paste and all your dry spices/herbs and cook till your tomatoes /cravy is medium cooked. Add a bit of water if it gets too dry.
Add browned beef to the stew with your carrots and potatoes. Add water. Cover and let it cook on medium heat (adjust depending on your stove) till the stew has cooked and soup starts to thicken. Add salt, some black pepper, garam masala, sweet chilli sauce and soy sauce. Mix and let it simmer for a few minutes (5 max).
Make sure you have enough soup in your stew-ie your stew soup isn't too thick or dry.
At this point you are ready to add dumplings dough (if making dumplings).
Cover with a clean dry lid ensuring there are no openings. And cook on low to medium heat for 15 to 20 minutes or till your dumplings have cooked or till soup has thickened properly if not making dumplings.
